To determine the sugar concentration 2 methods are used:

1) via density measurement with a densitometer

2) via refractive index measurement

one can find the concentration of sugar in the juice in tables

Density is measured in grams/ml or Brex-values. Both values can be found in tables and ca,n be converted to grams sugar/liter. Sugar is converted into alcohol, and so by measuring the amount of sugar, one can estimate the alcohol percentage after fermentation.
